One of my favourite dishes in Chinese cuisine is these delicious walnuts. Walnuts are a good source of omega 3 fats. And although I know eating them raw is the healthiest way, I am not against decorating them a bit for a nice holiday like the Chinese New Year.
When I was a kid, my grandmother would take the family downtown to our favourite Chinese restaurant Pearl Chinese Cuisine for dinner. The first dish would always be shrimp chips and these candied walnuts. My sisters and I would fight for them because were the most delicious things ever.
Now I know how to make them myself. I used canola oil for this, because it has a neutral taste.

RECIPE: Chinese Fried Walnuts
Prep Time: 10 mins | Cook Time: 20 mins | Ready in: 45 mins
- 1 pound shelled walnuts
- 1 cup granulated sugar
- canola oil for frying
- 1 tbsp sesame seeds
- salt to taste
- In a medium stock pot, place walnuts, cover with water and boil fo 2 minutes. Strain (do not rinse). Transfer to a bowl, toss with sugar and while still hot. Make sure they are well-coated!
- Heat 3 inches of canola oil in a large saucepan over medium-high heat. Once oil appears to simmer, fry 1 nut to test if the heat is at the correct temperature.
- Toss nuts before frying 1/3 batch of nuts at a time for 4 to 5 minutes uncovered.
- Using a spoon with slots, transfer each batch to a cookie sheet to cool.
- Sprinkle with sesame seeds.
- Season to taste with salt. Break apart when cool.
