Chinese-Style Cucumber Salad
1/3 cup seasoned rice vinegar
1.5 Tbsp granulated sugar
1 tsp pure sesame seed oil
1/4 red pepper flakes
1/2 tsp salt
2 large cucumbers
3 green onions
1/3 cup chopped peanuts
- In a small bowl, combine rice vinegar, sugar, sesame seed oil, red pepper flakes and salt. Set aside.
- Peel and slice cucumber. Keep more cucumber peel on for greater nutritional benefits (Fibre, vitamin K and A). Place in a large bowl.
- Chop peanuts into smaller pieces. Slice green onions.
- Add dressing, peanuts and green onions to sliced cucumbers. Stir to combine. Can be served immediately or refrigerated until ready to eat. Stir salad before serving to redistribute dressing in flavours.
