I love apples. Even better if the apples are locally grown from here in Ontario. My favourite apple varieties in Ontario are definitely the sweet and tart ones. McIntosh, Cortland, and Empire – nothing beats biting into a crispy, sweet and slightly sour apple! But if you enjoy Gala, Honeycrisp or Red Delicious, I promise I won’t discriminate against you. I have a recipe here that involves cooking apples in the frying pan and then adding kale to it – the perfect combination of sweet and salty. You can use any variety of apples you like. Here I used Empire apples.

Vegan Recipe: Apple & Kale Sauté
- 1 Tbsp canola oil
- 1 small white onion, sliced
- 2 local Empire apples, cored and diced
- 2 tsp apple cider vinegar (you might need slightly more if you are using sweeter apples like Fuji or Honeycrisp)
- ½ tsp sea salt
- ¼ tsp ground black pepper
- 4 cups chopped kale, stems removed
- Heat canola oil in a large skillet over medium heat. Add onion, cook and stir until tender, about 3-4 minutes.
- Add apples, vinegar, salt and pepper. Cover and cook until applies are tender, about 3 minutes.
- Add kale. Cover and cook until kale is tender, about 4-5 minutes.
- Add salt and pepper to taste.
